Mrs. Calesin's Homemade Chicken Soup








The best soup doesn't have to take forever to make. This next recipe is a crowd-pleaser and can easily be made for any number of guests. As you can see from the ingredients, there are lots of possibilities.








Ingredients:
2 qts. water
12.5 oz can Chunk Chicken Breast
8 chicken bouillion cubes
2 large carrots peeled then sliced into 1/8-inch thick disks
1/2 c chopped onion (try different varieties)

Instructions:
Simmer 15 minutes.
Add 2 cups cooked brown rice

Add seasoning to taste:
- Salt
- Pepper
- Italian seasoning
- Garlic powder
(Use your favorites)

Further Instruction:
Simmer 5-10 minutes more.

*Makes 4 generous servings.

Welcome Home Chocolate Cake







It doesn't matter what time of day or night. I always go for a good piece of chocolate. That is why I picked "Welcome Home, Mr. Anders" Chocolate Cake as my first recipe. This is the recipe we always make for my birthday cake. Delicious!





 

Ingredients: 
2 c. all-purpose flour
2 c. sugar
1 tsp. soda
1 tsp. salt
½ tsp. baking powder
¾ c. water
½ c. butter
2 eggs
1 tsp. vanilla
12 Tbsp. unsweetened cocoa
4 Tbsp. extra virgin olive oil or vegetable oil
1 Tbsp. lemon juice in ¾ c. measure fill rest with nonfat milk – let sit 5 minutes to sour milk

Instructions:
Heat oven to 350°. Grease, flour two 9-inch baking pans, line bottoms with wax paper. Measure all ingredients into large mixer bowl. Blend ½ minute on low speed, scraping bowl constantly. Beat 3 minutes high speed, scraping bowl occasionally. Pour evenly into pans.

Bake 30 minutes or until wooden pick inserted in center comes out clean. Let cool on wire rack for 7 minutes. Remove from pans and cool completely.

*Note: Mrs. Anders filled and frosted the top and sides of their cake with yummy chocolate frosting.
